Based in Başakşehir, İstanbul & the world's dinner tables

"Every dish tells a story that a history book never could — and Turkish cuisine has been whispering these stories for millennia."

I grew up in Başakşehir, on the European fringe of İstanbul, in a household where the kitchen was never truly quiet. My grandmother, Fatma Hanım, rose before dawn to prepare börek from hand-stretched yufka, and the smell of sizzling butter and white cheese woven through flaky pastry layers is, to this day, my most vivid memory of childhood. Food was never just nourishment in our home — it was language, ritual, and love made tangible.

İstanbul itself is a culinary crossroads unlike any other. Growing up between the Grand Bazaar's spice stalls and the fish markets of Eminönü, I absorbed a thousand different food cultures without ever leaving the city. Yet the more I learned about Turkey's regional depth — the smoky lamb dishes of the Black Sea highlands, the pomegranate-laced meze of Gaziantep, the herb-heavy yoghurt soups of Central Anatolia — the more I realised how little of this extraordinary heritage was reaching the wider world.

After studying culinary arts and spending years travelling through Turkey's seventy-plus provinces — from the walnut groves of Kastamonu to the saffron fields near Safranbolu — I began documenting what I found: dishes that appear in no cookbook, techniques passed between mothers and daughters across centuries, and the quiet regional pride that makes Turkish food so profoundly diverse. That documentation became zahirlukenavarro.

My mission here is straightforward: to share these recipes with the care and context they deserve. I write for the curious home cook who wants more than a list of ingredients — who wants to understand why a particular spice appears in one village and not the next, or why the same dish carries three different names across three neighbouring provinces. Turkish culinary heritage is layered, living, and endlessly fascinating, and it belongs on tables everywhere.

Whether you are recreating your grandmother's mercimek çorbası or attempting mantı for the very first time, you will find that every recipe on this site comes with its story — because the story is half the flavour.

"Turkish cuisine is not a trend — it is a 2,000-year-old living conversation between land, season, and people."

At zahirlukenavarro, every dish we share carries this belief at its core. Our mission is simple but demanding: to preserve, translate, and celebrate Turkish culinary tradition with the honesty it deserves.

Authenticity

Every recipe on zahirlukenavarro is tested and verified against primary regional sources — cookbooks, village elders, and local cooks from Anatolia to the Aegean coast. We never approximate when the real thing can be found.

Cultural Respect

We believe that naming a dish correctly is an act of dignity. Every recipe carries its proper Turkish name, its regional origin, and the story of the hands that shaped it — because food is never just food.

Accessibility

Great Turkish cooking should be within reach of every curious cook, whether you're making your first börek or mastering a slow-cooked kuzu güveç. Our instructions are written with clarity, patience, and no assumed expertise.

Our Commitment

These are not marketing promises — they are the editorial standards by which every post on zahirlukenavarro is measured, before anything reaches the page.
